Cozy Up with Raclette
Raclette, it's both the name of the cheese and the dish. Popular in Switzerland and France, the milk comes from Alpine-grazing cows and it turns into the perfect melting cheese. Traditionally, the cheese is melted and scraped onto potatoes, bread, vegetables, cornichons and charcuterie. It makes for a cozy meal or a fun centerpiece to a gathering with friends. If you'd rather to skip the grill and keep it simple, you can make mini raclette sandwiches. Grab a Babette's baguette from the shop, split it in half, lengthwise, and top with Casella's heritage breed prosciutto and slices of raclette cheese. Broil the open-faced sandwiches in the oven for a few minutes, until the cheese is melted. Dig in!
Whichever way you choose to serve raclette, we recommend pairing it with a white wine or your favorite beer.
