If you're a truffle fiend, it's time to get excited.  We've been working with Kyle Morgan for months on this little project, and the first batch of freshly cooked chips is coming in today! Come grab a bag (Or five, let's be honest) in the shop.

Morgan Handmade Rations is adding the Parmesan Black Truffle chip to the Good Food Award winning Colorado Green Chile chips and we are pumped to have collaborated with them on this luxurious new flavor made with Colorado-grown potatoes.



The chips feature the truffle and cheese salt we sell in our shop. An innovative combination of Parmigiano Reggiano skillfully blended with Casina Rossa's award-winning "Truffle & Salt.

Slow Foods Nation is Back

Slow Foods Nation is Back

We are stoked that the third year of Slow Foods Nations is here. Soak up the knowledge and tastes of food leaders, eaters, farmers and chefs. It's going to be a delicious weekend of tastings, tours and talks.

You can find us in Larimer Square at the Taste Marketplace. Come taste the goods of over 80 merchants from around the country. The best part? This Slow Foods Nation event is totally free. We'll be in a booth with our friends from Ritrovo discussing and sampling some of their most popular products. One item is the beloved soy sauce we have in our shop. The WuWanWo soy sauce from Taiwan uses only indigenous black soybeans, Piranske Soline sea salt, brown sugar and natural seasonings. This soy sauce is naturally fermented in traditional Taiwanterra cotta pots for 180 days. You haven't really tasted soy sauce until you've tried this. Slow Foods has even inducted this soy sauce into the Ark of Taste, a catalog of foods facing extinction.

Our Favorite Cheese for a Grilled Cheese Sandwich

We are often asked in the shop what is our favorite cheese for a grilled cheese sandwich. While we like to switch it up every now and again,  our go-to cheese is hands down the Scharfe Maxx. It's the ultimate melting cheese.

Made in Switzerland, it's firm, yet super creamy with pop of its signature sharpness. (Scharfe Maxx means extra sharp.)

Meal Kit: Sausage & Porcini Pasta Dinner

Figuring out what to make for dinner after a long day at work feels daunting. We know.

To help with the daily question, "What's for dinner?", we have meal kits. These are our go-to meals we take home from the shop with us when we need a quick and delicious dinner on the table. They're easy recipe ideas and all the ingredients can be found at St. Kilian's.

Pop in or order a kit online for pick-up. This pasta meal is hearty, flavorful and a real crowd-pleaser. Plus, the leftovers are awesome.

Sausage & Porcini Pasta

Cook time: About 25 minutes

Serves 4

• 1 package Truccioli Pasta

• 1-2 tbsp olive oil

• 1 package Sweet Italian Sausage from Carmine Lonardo's

• 1 jar Tomato Porcini Sugo by Casina Rossa

• Pecorino Romano Cheese, grated to taste

• Salt and pepper, to taste

1. Fill a large pot with well-salted water and bring to a boil. Once boiling, add in truccioli pasta and cook for 10 to 14 minutes, or until al dente. Strain and set aside.

2. Meanwhile, remove sausage from casing and slice. Heat oil in a large skillet over medium high heat.

3. Sear sausage for a few minutes, until browned.

4. Add in porcini pasta sauce and cook with the sausage until heated through, stirring occasionally. Season with salt and pepper, according to taste.

5. Divide pasta between serving bowls and top with sausage and sauce mixture.

6. Finally, garnish with freshly grated Pecorino Romano cheese. Enjoy!
