Redhead Creamery Margie Clothbound Cheddar - Minnesota

Cow's Milk

From the fertile farmlands of Minnesota comes this clothbound cheddar aged in traditional English style with natural cloth wrapping. This cheese develops complex, nutty flavors. The Redhead Creamery has perfected this time-honored technique, creating a cheese that rivals the best European examples while maintaining a distinctly American character.

Pair with apple slices and a crisp American cider, or enjoy with crusty bread and local honey.

Fiscalini Lionza Alpine Style - California

Cow's Milk

From California's Central Valley, this Alpine-style cheese represents the American interpretation of traditional Swiss and Austrian cheesemaking. The Fiscalini family has been perfecting their craft for decades. Aged to perfection, this semi-hard cheese showcases how American artisans have embraced European traditions and made them their own.

Pair with dried fruit and nuts, or melt into a grilled cheese with sourdough bread.

 

River Whey Creamery Whey Blue - Texas

Cow's Milk

Made using traditional blue cheese techniques but with a distinctly American approach, this creamy, complex, raw milk cheese offers the perfect balance of tangy blue flavor and rich, buttery texture. Based on a French blue, but with Texas milk. The careful aging process creates beautiful blue-green veining throughout, resulting in a cheese that's both approachable and sophisticated.

Pair with fresh pears and walnuts, or crumble over a salad with balsamic vinaigrette.

Lady Edison Ham - North Carolina

For those with the meat option, we've included American charcuterie that embodies the same principles of artisan excellence as our featured cheeses. Lady Edison sources heritage hogs—a cross of Berkshire, Chester White, and Duroc—exclusively from North Carolina Natural Hog Growers Association small family farms committed to traditional, sustainable practices. These 100% pasture-raised hogs are Animal Welfare Approved and certified non-GMO.

Already sliced thin, and serve the ham with the cheeses, or enjoy on its own with mustard and pickles.
