Withersbrook Blue is an ice cider-soaked, natural rind blue cheese made with raw milk from our own herd. The name comes from a winding forest brook that originates near our creamery in Greensboro and meanders through the sugarbush alongside our pastures.
This curious cube spends 60 days maturing in the Cellars at Jasper Hill where it develops distinctive veins of blue flora. From there, we load the cheese into a pouch along with a hearty pour of Eden Ice Cider. This sweet libation is crafted from locally grown apple cider that has been stored outside for a freezing Vermont winter. A spring thaw releases the juice’s sugars, leaving the water behind in order to concentrate the apple’s essence. The fermented result yields a delicious dessert cider with a bright acidity that mingles elegantly with the cheese.

The owners Jon and Veronica have spent the last 14+ years seeking about the very best foods from around the work and around the corner. Our store is filled with our favorite foods with a special emphasis on cheese, charcuterie and Italian Imports.
We're excited to offer a large assortment from our retail store for online ordering. Please keep in mind that we are primarily a retail store and while we do our best to accurately represent all of our products online, nothing can replace the service of our expert cheesemongers in person. SHIPPING (BASED ON ACTUAL CARRIER RATES)
We offer nationwide shipping on the majority of our in-store products, we primarily utilize UPS for most services and you can see our prices and options at checkout.
Since many of our products are perishable we package orders in temperature controlled boxes to minimize the amount of time products are out of ideal temperatures, many require expedited shipping services, and we cannot ship certain highly perishable items like raw meats and meal kits, to ensure product quality. If you place an order for perishable items later in the week we may hold your order until Monday to ensure you shipment doesn't sit over a long weekend in a truck or warehouse.
