Our goal is to bring high quality charcuterie items such as variations of salami and whole muscle cures like pancetta and coppa to the Denver food scene. Through USDA inspection we will be able to provide our products to retail outlets and restaurants across the nation with our focus being of course the place where we grew up and love, Denver. The key ingredient is humanely raised heritage breed pigs. They provide us with the tastiest, best meat out there in return for a happy life lived outdoors. We are excited about the opportunity to honor these animals and support the farmers doing it right by turning them into delicious charcuterie for everyone to enjoy. Our hope is that we can share this passion with as many people as possible and in return support these farmers and animals. The way to save these animals and the way they are raised is by buying the meat that comes from their sacrifice.
